Mandarin, nectarine and crisp red apple lead the cup, with bergamot adding a bright, aromatic lift. White grape sweetness runs throughout. Bright and clean, with a delicate, rounded mouthfeel that brings to mind sake and rice pudding. Balanced, transparent and beautifully composed. A natural match for sweet, delicate desserts, like Pavlova.

No matter how great the machine you build, the most important question remains: what coffee will you brew with it? When Japanese coffee machine makers Daito Giken came to that realization, they set off on a journey through Central America in search of exceptional coffee. Their search eventually led them to Costa Rica and Hacienda Copey Los Grandes.

The farm sits high in the Tarrazú mountains, at 2,000 metres above sea level, where climate, soil, ecosystem and farming expertise come together to create a remarkable terroir. Hacienda Copey is particularly renowned for its Gesha harvests, twice earning top honours at the prestigious Cup of Excellence competition.
