The farm is located in the Tarrazú highlands, 2,000 metres above sea level, where climate, soil, ecosystem, and farming skill combine to create a rare terroir. Hacienda Copey is renowned for its Geisha harvests, having twice won the prestigious Cup of Excellence. In previous seasons we have enjoyed their Geisha, but this time we have chosen Catuai Amarillo — a yellow-ripening variety of Catuai Arabica.
Processed with the Black Honey Anaerobic method, it brings out the variety’s nuances, adding even more sweetness and complexity. Catuai can be a fairly neutral variety, but when matured well and processed with precision, its character comes out remarkably — velvety thickness, excellent body, tropical fruit and floral notes. Grown at high altitude, it shows citrus clarity with subtle hints of nutmeg and cinnamon.
Although not a ‘drama queen’ like Geisha, Catuai from the hands of a master delights as a pure, sweet, and structurally solid coffee.
